We hold your table for a full evening, not ninety minutes. Beef is hung 35 days and cooked over British lumpwood. The fire in the snug is lit from the first cold week in October.

The grill

Two hours to light. That is why we open at noon.

The grill burns lumpwood, not gas, and it takes until midday to settle. Everything that goes over it was butchered a mile from here: sirloin, ribeye, lamb chops from Wharfedale, a half chicken pressed under a brick.

We roast 40 kilos of Yorkshire sirloin and six pork bellies every Sunday. When the board is empty, that is the day done.

The short version

Three things that have not changed.

The fire came first

The chimney in the snug has been drawing since 1871. We rebuilt the room around it in 2019 and left the bricks exactly where they were.

One farm, one butcher

Beef comes from a single herd in the Dales and hangs 35 days in our own fridge. We break the sides down here every Monday.

Charcoal, not gas

The grill burns British lumpwood and takes two hours to come up to temperature. That is why the kitchen opens at noon and not before.
